This signature Comtesse du Barry creation combines the sweetness of figs with duck foie gras, offering a melting heart and a silky jelly that enhances the softness of the foie gras. This sweet and savoury, finely spiced combination will delight your guests, as a starter to share or as elegant slices on festive tableware.
A simple starter : gravlax or smoked salmon
Comtesse du Barry salmon comes from carefully selected farms in the fjords of Norway and Scotland. Freshly transported to our workshops in Brioude, Auvergne, the fillets are extra fresh. They are worked by hand, salted with dry salt, then delicately smoked at low temperature over beech and oak wood. This 48-hour slow smoking process imbues the fillets with a subtle, unique flavour. Finally, each fillet is sliced by hand using traditional methods.

For a quick, original and easy Christmas dinner
This is without doubt one of our most original recipes : roast duck breast with foie gras. A plump roast with a whole semi-cooked foie gras at its heart.
This one is IGP, and guarantees that the duck has been reared for a minimum of 91 days, in the open air and fed without GMOs. A side dish of mashed potatoes or beans would be perfect.
