Our choice salmon is reared in scottish lochs.
All our salmon is fresh (never frozen) on arrival , it is hand filetted then dry salted for optimum preservation. It is oak smoked for a whole 48 hours at low temperature giving the fillets that subtle taste that only slow smoking can. It is artfully sliced by hand.
The heart of the fillet is the leanest plumpest part ot the fillet ; ready sliced full flavoured and firm textured, it will give you an exquisite taste experience.
