A whole semi-cooked foie gras is hidden in the heart of this roast. The foie gras has been semi-cooked, which ensures that the heart does not melt during cooking. Duck breast PGI South-West and duck foie gras PGI South-West.

The IGP label (Protected Geographical Indication) guarantees a strict respect of the specifications with ducks raised for a minimum of 91 days, in the open air and fed without GMO. 

 

Advice for accompaniment and preparation : 

4 to 6 people

Cook for 30 min in a preheated oven at 200°C.
Slide a drip pan under the roast to catch the fat of the duck breasts.
Turn the roast after 20 minutes of cooking.
Once cooked, wrap it in aluminum foil and let it rest for 10 minutes at room temperature before cutting it. 
Remove from the refrigerator and wrap 30 minutes before cooking to allow the meat to relax.


Serve with :

  • A pan of potatoes fried in the fat of the duck breast and garnished with slices of truffles
  • A pan of mushrooms (ceps, chanterelles etc.)
  • Chestnuts
