At Comtesse du Barry, our terrine-making heritage dates back to 1908, when our first recipes were perfected in the heart of Gimont, Gers. Each terrine begins its journey in a large earthenware pot, known in French as "terrine" - the literal translation that gave this culinary art its name.
The process follows time-honoured methods: choice cuts of meat are carefully prepared and cooked in a bain-marie, allowing distinct flavors to develop gradually. Our rectangular dishes, crafted specifically for this purpose, ensure optimal texture when served at room temperature.
Working with a cooperative of 8,000 farmers in the South-West of France, we maintain the authenticity of regional recipes while preserving the rich gastronomic heritage that has earned French cuisine its UNESCO recognition.
