Médaillon of goose liver
Description
A starter that's both simple and exceptional, with a block of South-West goose foie gras with subtle aromas and a finely-cooked stuffing. A delicious, fragrant recipe for a successful starter !
Serving suggestions :
The goose liver medallion is beautifully presented when sliced. Serve it on a salad dressed with a light vinaigrette made with a little balsamic vinegar and walnut or hazelnut oil. For an original, gourmet starter, it can be served with onion confit.
We recommend serving it with a sweet white wine such as Jurançon or Sauternes.
It should be placed in the fridge the day before serving. Take it out only 15 minutes before serving.
