A subtle mixture of finely ground sweet almonds, candied melon and orange peel, all set on a bed of host, and covered with royal ice: the recipe of the calisson of Aix has remained unchanged since its creation for the pleasure of a queen.
The art and the way of making these sweets have crossed the centuries. Since 1454, it is still and always the same magic formula which makes law: to 1/3 of almonds, mix 1/3 of candied melon of Apt, and 1/3 of very hot sugar syrup.

Listed as a living heritage of the city of Aix-en-Provence, the history of the calisson goes back to the time of King René in the 15th century.
Legend has it that the King's confectioner made this delicacy to delight Queen Jeanne on her wedding day.
She named these delicacies "di calin soun" (they are cuddly in Provencal).
