Duck parmentier, shallot fondue
Description
Our house ennobles this traditional recipe by incorporating a thinly sliced duck, melting and tasty, with a dash of Madeira wine and tenderly candied shallots. A harmonious whole that is combined with the sweetness of mashed potatoes with fresh cream flavoured with nutmeg and turmeric. The recipe is flavoured by the addition of duck juice and a mixture of spices that give finesse to this exceptional dish.

Remove the lid and reheat in a traditional oven, or 3 minutes in the microwave.
You can accompany our parmentier with a romaine salad or lettuce seasoned with sherry vinegar and sunflower oil, or with a pan of parsleyed green beans.
