This powder usually brings a lot of bitterness to the tapenade and is then covered either by anchovy cream or by salt. This tapenade offers you an authentic olive taste and a real chewiness (real olive pieces in the mouth).

Tasting advice

The black tapenade with dried tomatoes and basil can be served on toast as an aperitif, to stuff a fish to be grilled, a red mullet for example, or to brush a white meat like a rabbit (with tapenade).
