Description
Chestnuts glazed to perfection, as soft as you wish, prepared according to the traditional recipe and individually wrapped.
The chestnuts are candied for 7 days, using an old traditional French method, in a syrup made from sugar, glucose and Bourbon vanilla pod from Madagascar. The subtle flavour of the fruit is retained. A good chestnut should have the same volume, both raw and candied.
The chestnuts are then drained, removed from their tulle, arranged on grids or tinned depending on their size and colour. Glazing consists of coating the chestnuts with a thin film of glaze and drying them in the oven.
The chestnuts are wrapped in gold-coloured aluminium foil to protect them from the outside atmosphere. A transparent film also protects the tins from drying out.
