Comtesse du Barry perpetuates the tradition of the South-West by cooking this emblematic recipe. Duck meat cooked for a long time in a vegetable and herb stock, enhanced by duck fat. 

Terrine with sweet Gascony wine 70g :
This terrine combines the sweetness and fruitiness of the sweet wine with the strength of the duck and the creaminess of the foie gras.

Farmhouse chicken rillettes with porcini mushrooms and argan oil 70g :
The delicacy of the chicken, the exotic touch of the argan oil and the porcini mushrooms give these rillettes the flavour of undergrowth, magnifying the aromas. 

Pork rillettes with Espelette chilli and Bayonne ham 70g :
Rillettes dedicated to the Basque region, cooked with pieces of pork slowly cooked in a broth rich in vegetables and herbs. Its flavour is enhanced by Espelette chilli pepper and Bayonne Ham.

Country terrine with hazelnuts 70g :
