Description
Vinified using indigenous yeasts Aged on fine lees for 2 months with regular stirring of the lees.
Martin and Mathieu Béraut manage the family estate, one of the oldest vineyards in the Gers (400 years old), where vines, cattle rearing (Blonde d'Aquitaine breed) and cereals coexist in perfect harmony and offer a rich and varied biodiversity. When Mathieu Béraut arrived at the estate after working in the United States, he wanted to introduce this grape variety to the appellation. The aim was to be able to feed his creativity, as this variety brings fatness and length on the palate, something we were lacking in the Gascon varieties. This world-famous grape variety with its rich history deserved to be showcased in a 100% Chardonnay cuvée where the expression of a limestone terroir of white stones (Peyrusquet in Occitan) would give it all its charm.
Sight : Yellow hue with green highlights.
Nose : Notes of stone fruits such as mirabelle plum and white peach blend with gourmand notes of beeswax and lily of the valley.
Palate : A lemony, minty attack at the start, followed by an aromatic framework of white peach, mirabelle plum and pear in syrup, with a mineral finish.
Serving suggestions :
As an aperitif with fish, shellfish and seafood, but also with poultry.
Serve between 9°C and 11°C.
Keep for 3 to 5 years.
