Description
The idea behind this recipe is to offer a gastronomic classic with a touch of the South West. Browned onions and carrots are combined with beef cooked in duck fat.
The whole thing is simmered, just like a classic parmentier. The mashed potato is then added, with a hint of nutmeg and cream.

Tasting advice :
Remove the lid and reheat in a traditional oven, or 3 minutes in the microwave.
To be enjoyed with salad, especially young mustard and/or spinach shoots, for freshness.
