Description
An emblematic speciality of south-western France, our duck breast, taken from the most tender part of the duck, is dried for at least eleven days and then matured to bring out all its flavours.
It develops a more pronounced taste than smoked duck breast and a firmer sliced texture.
Origin :
Our dried duck breast has the IGP Sud-Ouest label.
It is prepared WITHOUT preservatives.
Preparation advice :
Keep refrigerated.
Take the duck breast out of the refrigerator and its packaging at least 10 minutes before serving. Peel off the slices to air them and leave them at room temperature.
Store between 0° and +4°C.
After opening, keep in a cool place and consume within 48 hours.
Tasting advice :
In gourmet salads.
As an appetizer with melon, cherry tomatoes or a few grapes.
In an omelette.
Recipe : Aperitif balls of dried duck breast
Remove the fat from the duck breasts.
Alternate dried duck breast slices, quail eggs, grapes and diced sheep's cheese on mini wooden skewers.
