With powerful flavors marked by the terroir, our duck foies gras are characterized by the frankness of their aromas and their strong taste.




A Comtesse du Barry Whole Duck Foie Gras, slices of farmhouse bread, a glass of sweet wine, a few real friends, and you're like a rooster. With its frank character and firm texture, this traditional foie gras comes from a duck born, raised and cooked in the Southwest. We prepared it by hand, with Guérande salt and pepper, according to a very strict specification.

Tasting advice
Place the foie gras in the refrigerator the day before. Take care to remove it only 15 minutes before tasting. Slice it at the last moment because our products are free of coloring and preservatives and would brown superficially in contact with the air but without altering the taste.
As an appetizer: Slice 125 g of foie gras into fine shavings. Peel 2 pears and cut them lengthwise. Spread salad leaves seasoned with oil and balsamic vinegar. Arrange the foie gras shavings and the pear pieces and sprinkle with a pinch of fleur de sel. Add a few slices of finely chopped Parmesan cheese.
As an aperitif: Serve on toast or country bread with Sauternes confit or onions.
