Our whole foies gras are guaranteed not to contain any preservatives (such as nitrite salt) and are prepared by hand, simply with Guérande salt and pepper.


Our whole foies gras come from IGP Sud-Ouest ducks.


Cooked through: its texture evolves over the years, as the foie gras absorbs its own fat and becomes smoother as it ages.


Preparation advice : 

Place the foie gras in the refrigerator the day before. Take care to take it out only 15 minutes before eating. Slice at the last moment. Our products do not contain any colouring agents or preservatives, and therefore would only turn grey on contact with the air without altering the taste. 


Advice for accompaniment/tasting :

As a starter: slice 125 g of foie gras into fine shavings. Peel 2 pears and cut them lengthways. Spread salad leaves seasoned with oil and balsamic vinegar (possibly with truffles). Arrange the shavings of foie gras and the pieces of pear and sprinkle with a pinch of fleur de sel (possibly truffle salt). Add a few strips of finely chopped parmesan. 
As an aperitif: present on plain or fig toast (as you wish), accompanied by a confit and/or a chutney (fig, onion, mango, Sauternes, etc.)
To be enjoyed with a white wine like the Derenoncourt range or the white Saint-Croix du Mont.
