More than 100 years of history and innovation
Joseph and Gabrielle Dubarry unite their destinies through marriage and settle in Gimont. They are soon to do the same with their skills.
Together they decide to make the best foie gras in the world!
The spirit of Comtesse du Barry was born. Since the products Comtesse du Barry delight every year thousands of gourmets, from generation to generation.
- 1954 : Henri Lacroix finalises his manufacturing process for producing blocks of foie gras. A revolutionary process that has remained unchanged ever since.
- 1982 : Comtesse's duck pâté with green pepper is awarded 1st prize for the best gourmet food imported by the United States.
- 1988 : The French National Centre for Space Studies (CNES) selects Comtesse du Barry products for the cosmonaut's diet on the French-Soviet flight "Aragats". Ready made dishes conditionned in glass jars win the Oscar for packaging and the prize "Verre Avenir".
- 1989 : Authentic Roman recipes are revived by Comtesse du Barry with the help of C.N.R.S (National Center for Scientific Research) and the head chef R Pedrazzini from Saint-Bertrand-de-Comminges and with the collaboration of the Association for the Promotion of Archaeology and the Midi-Pyrénées Museum of Archaeology. These authentic roman recipes are restored with great precision and recall those savoured by our ancestors in an almost identical fashion.
- 1994 : Comtesse du Barry presents the Whole duck Foie Gras, semi-preserved (ducks fattened with figs and com as in Antiquity. The duck foie gras obtained has a smoother, more subtle taste.
- 2005 : Comtesse du Barry continues to innovate by creating the "four seasons foies gras".
- 2008 : Comtesse du Barry celebrates its centenary.
- 2011 : In seven years, the Comtesse du Barry products won medals many times at the Concours Général Agricole de Paris.
- Today Comtesse du Barry continues to develop products and delicious in spirit of the times, while preserving the historical recipes transmitted by its founders.
It plans to expand its network in France but also in the main capitals of the world to become the true ambassador of French gastronomy.

Comtesse du Barry uses Label Rouge Sud-Ouest farmer's geese and ducks for its foie gras. These farms and livestock are regularly inspected by an independent organisation.

Comtesse du Barry has the 'Excellence Gers' status for products manufactured with Label Rouge (Gers) farm-raised geese and IGP duck 'à la foie gras du Sud-Ouest Gers', both official marks guaranteeing quality and source. Comtesse du Barry complies with Environmental and Hospitality criteria. |
Comtesse du Barry defends the origin, quality and traceability of products derived from duck foie gras from Southwest. The official label affixed on certified products (foie gras, confit), is your guarantee of an exclusive feeding whole grain corn, a continuous control of our raw materials to finished product, a traceability food security and a transparent, controlled, monitored. |
The manufacture of all gastronomic Comtesse du Barry is ISO 9001 certified. For us, this certification means recognition of our requirement. |

Comtesse du Barry is a member of the Federation Française de la Franchise. Its contract is recognised by this committee. With a duration of five years (renewable), it outlines the rights and obligations of partners and also defines the exclusivity territory.

- No fee 0 to 150 000 € HT turnover, 7% above 150 000 € CA.
- The margin is estimated at 45% and return on investment in 5 years.
